Daniel Humm, chef and owner of three Michelin-starred New York fine diner, Eleven Madison Park, is heading Down Under for a residency at Aria Sydney, as part of the Vivid Sydney festival.
Eleven Madison Park is thought to be the only vegan restaurant in the world with three Michelin-stars, the highest accolade a restaurant can be awarded.
Humm, who in 2021 embraced an entirely plant-based menu at his internationally acclaimed restaurant, (named The World’s Best Restaurant in 2017), will take over the kitchen at Sydney’s Aria restaurant from 6-17 June.
Aria’s co-owner, Matt Moran said “Vivid is one of the best times of year to dine at Aria. This year it’s an incredible honour to be hosting Daniel Humm and his incredible Eleven Madison Park team for the first Vivid Residency.
“I’ve long admired what Daniel has done in New York and we can’t wait to work alongside his world-class team to deliver something that it going to be quite special.”
The Vivid Residency menu will showcase Humm’s plant-based approach to fine dining “showcasing the diverse flavours, processes and ingredients that capture the essence of New South Wales,” the Aria website reads.
Two tasting menus will be available: a nine course tasting menu for dinner ($550pp) and a shorter tasting menu for lunch ($395pp).
